Westerns, always, Cowboys, glass, milk, order

Question by Hex Enduction:

Why in Westerns do Cowboys always order a glass of milk at the bar?

I grew up watching old Westerns and always wondered why the cowboys always order a glass of milk.

I have some theories, but was wondering if anyone else could chip in.

Thanks.
